Ingredients

  • 2 pounds heritage pork shoulder
  • 2 teaspoons rosemary dried
  • 2 teaspoons onion powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons cocoa powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground fennel seeds
  • 1/2 teaspoon ground cayenne pepper
  • Sea salt and fresh ground black pepper to taste
  • 1/3 cup homemade chicken broth
  • 8 leaves organic iceburg or butter leaf lettuce

Instructions

  • Pour all of the spices from the list along with the cocoa powder into a small mixing bowl and add sea salt and fresh ground black pepper, to taste. Stir until well combined.
  • Take your spice mix and rub it into the heritage pork shoulder, making sure to coat the entire thing well.
  • Transfer the pork shoulder to your slow cooker or crockpot (5-6 quart size). Add the homemade chicken broth to the slow cooker with the seasoned pork and cook on low for 6 hours or high for 4 hours.
  • Once the pork shoulder is done cooking, use two forks to shred the pork while it's still sitting in the crockpot. Set your slow cooker to warm, and leave the pulled pork in the juices in the slow cooker for 20-30 minutes so it can fully absorb all of the yummy flavors.
  • To serve your pulled pork lettuce wraps, fill each of the lettuce leaves with a scoop of crunchy broccoli slaw along with a scoop of pulled pork.
